Your journal is the only record of quests you have taken. Stuff doesn't level to you so you might get murdered running into strong baddies, but thats also pretty fun. Follow it to the next city or just do whatever and come back to it eventually. after completing that first main story quest you're in a good spot to just do whatever you feel like, keeping the main quest in mind. if you ever get frustrated enough just look up better directions online. you get directions but no map markers which is actually pretty fun imo. This one is a good introduction to how questing works in the game. My advice when you get there would be to follow the main quest line which sends you out near by to another location you can clear.
You have to actually follow the signs on the road to get places but its usually pretty simple, just stay on the path and look for the next sign post and go towards Balamora. You find some interesting stuff on the way. Then I would suggest following the main quest line which takes you to Balamora. Clearing the bandit cave scores you enough gold for some more shit too. (The tower on the edge of town has some good stuff in it too) you should be able to sell for enough gold to buy you armor and a weapon and/or a spell or two to start you out. If you clear out the other rooms in the census office and whatever other stuff you find in town. I usually take the gold plate on the shelf in the same room where you choose your skills.

Morrowind is an amazing experience once you get over the initial learning curve. Doing the Balmora Fighters Guild quests and Mages guild quests are generally easy and fun and good way to sorta learn the layout of the nearby areas. Once in Balmora, go around and start talking to people. Starting out in Seyda Neen, I generally take the Silt Strider to Balmora. And when you start to feel more comfortable with things and the layout of the land, then maybe start taking on some of the bigger quests.
It really is a giant sandbox full of interesting people and exciting toys, so just go out and explore and take things as they come. There's no need to stick to any sort of schedule or set a high priority on any one particular quest, as that is where the game will overwhelm you the most in its lack of clear direction. This will help you develop the fundamentals and understanding of the world in which you exist and build a connection with it, and from there, just get lost and have fun. Talk to people, click on the blue text when it appears in conversation and allow yourself to learn more about your surroundings, and the lore that preceded/shaped them. The best advice I can offer is to just immerse yourself in the world as much as you can.
